Icarus is a play on your very traditional summery cocktail, a Mojito. Using the local gin from Chemist Distillery, and infusing orange peels it creates a wonderful citrus forward expression. The Chareu helps elevate the notes of cool mint and aloe. Finally topping it off with tonic to help brighten and balance out this very refreshing, yet boozy cocktail. Just like Icarus, this cocktail flies above the norm and will have you sinking into your seat.

Using Japanese Suntory Toki Whisky, with a bright burst of fresh blueberries and lemon, a hint of sweet orange honey, floral Violette and a splash of bubbles, this libation is sure to pair well with a summer day.
