A vodka highball cocktail with an Autumn inspiration. Refreshing and slightly spicy, this cocktail uses juiced butternut squash for a sweetness that won’t overpower the other ingredients. The name is inspired by a neighborhood in northern Manhattan that is known for its very high cliffs and scenic views.

Hints of cinnamon and allspice dram balance out the sour notes from the lemon juice, while the apple juice is a finishing touch – combined with Cruzan light rum to round it off while the cava gives it a holiday sparkle.
Who’s this for? Someone looking for a lighter cocktail like a French 75 or Mountain Air with bubbles, citrus, baking spice, and orchard flavors.

Inspired by the favorite holiday dish of Bargello’s general manager, stuffing, this cocktail tries to imitate some of the more savory elements of the season. Not meant to be a traditionally refreshing or acidic gin drink, the Second Ghostwill fit perfectly in the hands of dark spirit drinkers too. The alpine spirit Genepy plays a major role to combine and balance out the black pepper and menthol flavors coming from the infused dry vermouth and local fernet. The name is a nod to the 2nd ghost in A Christmas Carolrepresenting the ghost of Christmas present who is usually imagined as a big bold character wearing a holly wreath upon his head that looks like the rosemary garnish of this drink.
Who’s this for? Cocktail nerds! This is for those drinkers who don’t want sweet and go for something savory, herbaceous, slightly strong and something a little different from a usual gin cocktail.

Jolene at Sunset is a sort of variation of a classic Paloma with the grapefruit swapped out for a blackberry syrup that brings out really nice and deep, fruity flavors that are kept in check by ginger syrup and tonic. It’s a Tequila highball drink that is able to easily be customized and can be really refreshing on those random warm afternoons or sitting outside next to the fire pits.
Who’s this for? Still refreshing, yet sweet and slightly bitter, this is for tequila drinkers that want deeper flavors than the usual Paloma cocktail.

This smaller portioned Chocolate Martini variation provides more than the usual sweet and creamy characters of its predecessor. We use the bar and holiday staple of Creme de Cacao instead of richer chocolate liqueurs to give a subtle hint of milk chocolate. Allspice Dram and freshly grated nutmeg provide slight baking spice notes that will probably remind the guest of a sweeter, cold eggnog.
Who’s this for? If someone has a sweet tooth and is looking for a White Russian or any creamy dessert-style cocktail, this is for them.

Our take on the modern classic, the ‘Paper Plane’. We switched out the bourbon for housemade apple brandy and Gosling’s dark rum, to offer brown sugar and winter spice notes, and used the winter citrus, grapefruit, instead of lemon to provide a bitter element to balance the sugar notes. The addition of demerara and Hellfire bitters helps to round off the edges and provide a semi-sweet, but complex finish.
The name’s origin is of course a reference to the first aircraft designed by North Carolina’s very own Wright brothers.

A new twist to a Black Manhattan that offers deep and bittersweet flavorings from Averna, a Sicilian amaro, and bacon infused Evan Williams bourbon. Black walnut bitters and maple syrup have been added to balance out the complex flavors and add a little sweetness.
Who’s this for? Old Fashioned, Manhattan, and Sazerac drinkers. You’ll find darker, boozier notes that get balanced out by slightly smokey and salty bacon.

Whiskey sours are a classic cocktail that almost everyone has experienced at some point or another. The Chimney Swift takes that classic recipe and adds two Medditeranean cuisine staples to it, apricot and aleppo. Apricot gives a mellow sweetness that compliments the spicy and smoky notes you’ll find from the aleppo and Ancho Reyes Chile liqueur. As for its name, a chimney swift is a common small bird to the NC, Asheville area that makes its home in and on man made structures such as houses and chimneys.
Who’s this for? Anyone looking for a Whiskey Sour with some spice. Well balanced with acidity, smoke and spice, this sour style cocktail has a more stone-fruit focus that finishes with a tingle on the tip of your tongue.
FLIP IT & REVERSE IT ◊ 14

A local take on the classic egg based cocktail ‘The Flip’. First, we sourced ‘Smores’ Imperial Stout from Wicked Weed Brewing and then, infused Jameson Irish Whiskey with ‘Dynamite’ espresso beans. Finally, we added the southern staple, Sorghum syrup, and chocolate bitters to bring out those sweet, smoky flavors of the Smores and espresso.
Who’s this for? Someone interested in creamy, coffee cocktails like Espresso Martinis but made with a really fun old school style. The mouthfeel will retain a lingering dryness while the flavors themselves rotate between sweet, smokey, and roasted coffee notes.
